Apparently it’s National Grilled Cheese Sandwich Day today. I’m not sure this qualifies as a grilled cheese sandwich, but it is a very good breakfast sandwich that just happens to include cheese. This is a weekend kind of breakfast, the kind that takes a little more time, but will fuel you through a day of busy activity. It’s simple too: just layer your favorite bread with spicy cheese, add bacon and a lightly cooked egg, and enjoy. Perfect with a big cup of cafe au lait.
Bacon, Egg, and Spicy Cheese Sandwich
For each sandwich:
2 slices white, wheat, or multi-grain bread
1 ounce thinly sliced or grated pepper jack cheese
2 slices cooked bacon
1 large egg, cooked softly (over-easy or poached)
Preheat the broiler. Toast the bread and butter lightly. Place the bread slices, buttered side down, on a rack over a small baking sheet. Arrange half the cheese on each slice of bread. Run under the broiler until the cheese is melted and bubbly. Quickly nestle the bacon on one slice of the cheese-covered toast and place the cooked egg on the other. Carefully close the sandwich and serve immediately.
