I am in the midst of trying to read a book that’s been made into a movie. The problem is, the movie opens tonight! I’m not sure there is enough coffee or chocolate to help me make that deadline, so I’ll work on it through the weekend with the help of these chocolate ricotta muffins.
These chocolate muffins are not really a contradiction in terms; they contain only two ounces of butter and good protein in the form of ricotta cheese and milk. The recipe is from Mollie Katzen’s brilliant book “Sunlight Cafe”, which contains three hundred and fifty recipes designed to help start the day with a good , tasty breakfast. The only thing I have changed from the original recipe is to add a teaspoon of cinnamon to the dry ingredients and chopped bittersweet chocolate chunks in place of regular chocolate chips.
