I follow many food blogs and I certainly have my favorites. But every now and again I come across one that makes me say to myself, “how did I not know about this?” While browsing Instagram several weeks ago, this photo of a smoothie appeared. After reading the story on The Vanilla Bean Blog, I decided it was time to take action.
So, I signed up for the three week program at With Food and Love, called 21 Days to Lean and Green. This is a program that will make you take a closer look at how you nourish yourself, both body and mind. I don’t intend to become a full-time vegan, but I like the idea of incorporating more plant sources in my diet. At this time of year most of us need a little reminding that vegetables, whole grains, beans and legumes should take a primary place on our plates. Sherrie’s program provides a large variety of recipes, (for every meal of the day) valuable information on mindful eating and wellness, and a personal coaching session. Now, particularly, as my husband and I prepare for a major move across the country, I wanted a way to ensure that I didn’t let the stress of these next few months take its toll on my health. I can say that heading into the third week of the program I feel terrific. This fruit salad is my interpretation of Sherrie’s Blackberry and Mango Lemon Poppy Seed Fruit Salad with Earl Grey Whipped Coconut Cream. I have used Cara Cara Navel oranges, with their cheerful pink hue, and nutrient-dense blueberries. The fruit is bathed with a maple-sweetened syrup, and poppy seeds add a nice contrast in texture. The whipped coconut cream is a luscious garnish that makes this fruit salad very special indeed.
